birthdayIt’s easy for you to feel overwhelmed with the Christmas season fast approaching and the pressure to prepare the perfect Christmas dinner.

Nobody wants to be the one who eats the Christmas turkey. Johnny Perez Bradley is the chef de cuisine at Elmbank Hotel In York, who’s been a specialist in festive food for four years, he shares how you can cook turkey wrong—and his recipe for cooking up the perfect bird this Christmas.

Perez Bradley says that he’s here to discredit the myth that you have to get up early in order to prepare for the big event.

Perez Bradley states that one of the biggest concerns is how to manage the cooking time of meats as the centerpiece of the dinner table. “But long gone are the days of having to get up at 4 a.m. to prepare a turkey, as there are some great tricks to help you get ahead and start preparations early.”

Perez-Bradley says to use all the festive ingredients you have in your kitchen to create a moist brine for your turkey. He says that using items such as cinnamon sticks, cloves and allspice that are fried in a skillet and then boiled with water and fruit juice creates a wonderfully aromatic base to the turkey.

“This is a quick and easy Christmas Eve job, so you can let the turkey marinate for at least six hours—I recommend 24 hours if possible—and then it’s all ready to roast on Christmas morning.

He says, “Your guests won’t even know you were up all morning making mince pie,” and he continues:
