You can add any sweet Christmas goodies to this: thick cranberry glaze, small pieces or marzipan, Christmas cookies, or Christmas candies. Pecans, hazelnuts and walnuts are all good options.
It’s better than any other brand if you can find one that uses it.

ingredients
- 50 grams of dried Cranberries
- 2 tablespoons port, or any other sweet alcohol you have in your possession
- 600g Granny Smith apple, peeled, deseeded, and cut into very thin slices
- ½ teaspoon ground cinnamon (optional)
- 40 gm soft, light brown sugar
- Finely grated lemon zest
- 150g Christmas pudding, cut into pieces
- 45g marzipan, cut in small pieces (optional – there may not be any left)
- 250g of pastry sheets
- 55 grams of melted Butter
- Powdered sugar for dusting
Method
- Preheat the oven to 190°C / 180°C / gas fan 6.
- Combine the alcohol and the cranberries in small saucepan. It should be heated on high. When the liquid bubbles start to appear, remove the saucepan from the heat. Stir and let the cranberries simmer in the pan for 30 minutes.
- Mix the apple slices with the sugar, cinnamon, sugar, and lemon zest in a large bowl. Mix in the Christmas pudding pieces, marzipan and cranberries.
- One layer of phyllo dough should be laid on a clean tea towel. It should measure 38cm by 44cm. You can brush them with the melted butter, and then add another leaf.
- Butter the dough and spread the butter on top until all the pastry has been used. Place the filling on the pastry in a sausage-like shape, approximately 5 cm from your longest edge. Spread the marzipan evenly and leave a few inches at each end to seal the filling.
- Roll the pancake up using the tea towel as a guide. To close the strudel, turn the ends over from below. The tea towel with the strudel should be lifted onto a large baking tray or one the metal trays.
- After removing the patty from the tea towel, place the pastry on top. Although it may look messy, filo pastry is always delicious once it’s cooked and seasoned with powdered sugar.
- Brush the pie with the remaining butter and bake for 40 minutes until it is golden brown. Let the pie cool to room temperature. Before serving, sprinkle with powdered sugar.
